Like the world of WOMAD itself, these cuisines have developed from a fusion of cultures and international influences into vibrant expressions of their history, culture and people.
Inspired by Peru's vibrant ingredients and innovative cooking techniques, the Sanctuary Restaurant will take you on an extraordinary journey through the heart of Peruvian gastronomy. The menu showcases an array of South American asado and spiced meats, harmoniously paired with the vibrant tastes of West Indies and Caribbean cuisine.
This fine dining experience, with full table service, offers an opportunity to take a break, relax and indulge your culinary senses in flavours ranging from salmon ceviche to dulce de leche with drunken spiced fruit and rum chantilly.
